Now next door to the Music Box Theatre on the Southport Corridor in the Lakeview neighborhood, they expanded with a bagel bakery too. You may have noticed a lot has changed on the corned beef beat since I started covering what happened to the big Jewish delis in Chicago in 2018.

I ranked the 17 best corned beef sandwiches from 31 restaurants Id visited by then the following year. By 2020, most remained open for takeout on St. Patricks Day, despite the first pandemic dining room closure mandate, which took effect the night before.

Last year, you could get 24 great corned beef sandwiches across the city and suburbs, and even a free sandwich from Mannys, then running its unsuccessful customer mask challenge.

This year, weve seen more changes on the corned beef beat. Boeufhaus, which ranked in first place for best corned sandwich, has finally reopened in the Humboldt Park neighborhood after a two-year pandemic closure, but hasnt added corned beef sandwiches back to its menu. ChiTown Sandwich Club seems to have closed in Lakeview East. City Mouse is long gone, along with the whole Ace Hotel in the West Loop. Harringtons is back, but with catering only from a new location in Portage Park. Perrys Deli has given up its last vestige at the Bacci Pizzeria in the Loop. Rye Deli & Drink in Greektown has temporarily closed, promising a new menu this spring.

This Irish public house in the Avondale neighborhood makes a lovely classic corned beef, and a beautiful Reuben too. Co-owners and spouses Brendan and Siobhan McKinney opened in 1999, and theyre now famous for their glorious Sunday brunch buffet. When weather permits, you can picnic in the backyard, and imagine youre far away on the Emerald Isle.

The New Jersey Bypass At Kaufmans Bagel & Delicatessen

Kaufmans is the only place around town where you can clearly order your choice of meat fattiness . The lowest-priced happens to be the fattiest and the most flavorful. Owner Bette Dworkin seems to always be there, overseeing every silky slice in the store.

This new-school, deli-inspired, all-day cafe opened at the end of 2017 in the Printers Row neighborhood. Look for housemade corned beef and other specials on the chef-driven menu. Check the restaurants Instagram for doughnut specials, and remember to take a peek at the cocktail list too.

Corned Beef At Max And Bennys

The huge restaurant, deli and bakery, opened by Lester Schlan and named for his sons, is the epicenter of Jewish life in the North Shore suburbs. Get the tender corned beef in sandwiches piled so high, the fragrant house baked rye can barely contain it. The Best Method For Making Reuben Sandwiches At Home

We have a grilled-cheese philosophy here at Serious Eats, which is that both sides of each slice of bread should be toasted to maximize the crunch against the soft melted cheese. In some cases, this rule works for melts, which is what a Reuben technically is. But with the Reuben, I prefer to revert to single-side toasting, because I like the inner surfaces of the bread in a Reuben to be slightly steamed and tender, the whole thing partially fusing together.

One key step no matter what is to pre-heat both the corned beef and the sauerkraut, so that you’re not trying to warm through the entire jam-packed sandwich and instead are just trying to melt the cheese and toast the bread. The hot meat and kraut help get that cheese melted faster, too, so there’s no risk you’ll have unmelted cheese in the centera Reuben travesty, if ever there was one.

I use a restaurant trick for preheating the corned beef while keeping it tender and juicy, which is to seal the meat in a container or package with a little bit of water and stick it in a warm oven aluminum foil works just dandy as the package. The water generates steam, which, trapped in the foil, helps keep the meat from drying out. The kraut, meanwhile, I fry in butter, deepening its flavor and driving off any lingering wateriness.

Just remember: Don’t serve these to any friends who keep kosher.
