I first discovered wood fired brick ovens on cooking shows a few years ago. I have always wanted one since then. I did some research looking for the best one and the same name kept coming up: Chicago Brick Oven.
I got my oven in April of 2015 and started cooking right away after I installed it and followed the included instructions. The oven and the pizza I cooked became the sensation of my small town.

The Garzoni 350 Pizza Oven is the biggest model from their pizza oven kit family and one of the biggest in this review.
The round cooking floor with the 84.5 cm diameter has a 0.83 m2 surface. This is big enough for cooking 5 pizzas at once.

The design and construction
Garzoni 350 has a Tuscany dome with a height/diameter ratio of 0.496. The little hood with a chimney is positioned inside the dome and quite close to the dome center.
This is not ideal for the heat balance because the hot air from the top of the dome goes directly into the chimney before the thermal energy is delivered.
So, the airflow regulator should be installed into the chimney for better combustion control. The airflow regulator is especially important to enable retained heat cooking.
This oven kits construction is based on the 5 cm thick insulation board. On the insulation board, go the 5-pieces cooking floor, made of specifically designed, commercial-grade Italian fire pavers.
With the 5 cm thickness and good heat resistance, fire pavers seem like a durable baking surface. Its high thermal mass helps to achieve a great pizza crust.

Youll usually cook only one pizza at once because its much simpler and manageable. But, this doesnt mean that also the smallest pizza oven kit is big enough.
I cannot stress enough how important it is to have some extra space on the cooking floor. Firstly, you need the space for handling and rotating pizzas.
And you dont like to have the pizza right beside the fire. In this case, youll have to turn the pizza all the time. Otherwise, youll burn it.
In the previous section, we saw that you could cook many different meals in the wood-fired oven. The more cooking floor will allow you to realize this as far as possible.
So, dont look at one-pizza size ovens. Consider the two pizzas oven as the smallest size.
Have in your mind as a standard the medium size pizza with 30cm diameter. Some oven producers calculate the oven capacity by 25 cm or even 20 cm pizzas.
The smallest cooking surface for a wood-fired pizza oven should be around 0,30 m2 . This surface means the ovens internal diameter 62cm , or 55 x 55 cm if the oven has a square floor plan.But anyway, dont exaggerate. An oven with a 1m diameter or 0.8m2 cooking floor is more than enough for home use.
