Choosing A Deep Dish Pizza Place In Chicago

In my quest to discover the best deep dish pizza in Chicago, I managed to visit three pizza joints.

The first two served the classic Chicago-style pizza that has become one of the citys icons. The third was a mistake from start to finish so I wont be mentioning it here, and youll thank me for that. Still, choosing where to try the deep pan was a challenge all in itself.

Obviously, I turned to the internet, where I quickly drowned in lists of top 5s, top 10s and even a top 50. There were the original pizza places, the most popular, the with a twist, the craft-creators and the urban trendys. If I learned one thing from my pre-pie research its that everyone has an opinion and Chicago is not short on great pizza parlours to choose from.

This gave me some quandary until I returned to the root of the issue. I wanted to taste the original and I wanted to taste the best. That led me to two places: Unos and Giordarnos.

Unos, you will recognise as the restaurant that originally belonged to the brothers who invented Chicagos deep dish pizza. Established in 1943, the brand has exploded into a staggering-sized chain with over 100 restaurants around the world . However, the original restaurant still stands in its original spot in Chicago and it is there that I went for my first tasting.

And so my pizzeria choices were set.

What Is Deep Dish Pizza

For the uninitiated, Chicago-style pizza is created in a deep pan and is more similar in style to a pie. The crust sits at the bottom and the depth is filled with cheese, crushed tomato, meats and vegetables. This sets it apart from most other pizzas around the globe where you typically get a flat bread which is topped with a thin spread of tomato pizza sauce, cheese, meats and vegetables.

As for Chicagos claim to deep dish pizza fame, the story and the dish came about courtesy of two brothers. Since before the turn of the 19th century, Neapolitan immigrants had been crossing the Atlantic from Italy in search of work. And they bought their native flavours and recipe books with them.

Decades later, in 1943, brothers Ike Sewell and Ric Riccardo decided to set up a new restaurant called Unos where they recrafted the original thin crust pizza recipe to create a new style of pizza unlike any that had been served before.

With a Buttery out-of-this-world crust that had a tall edge like a fruit pie. He* created a recipe that combined authentic Italian spices and quality tomatoes with more cheese than people could believe and then baked it for nearly an hour.

And therein they created a food icon. And with more cheese than people could believe how could they not?

Pequod’soriginator Of The Caramelized Crust

In 1971, in the Chicago suburb of Morton Grove, Burt Katz opened Pequods, his third pizza-making venture. One of the things that distinguished the pan pizzas at Pequods from all the other deep dish style pizza in the city was its caramelized crust.

A layer of Mozzarella cheese was sandwiched between the dough and the edges of the pan in which it was made. The bottom crust and all the tall crust along the tall edge of the pan formed a caramelized coating of cheese while the pizza baked in the oven.

Today, more than 50 years later, Pequods is still renowned for its special pies, and routinely wins awards for making some of Chicagos best pizza. Recently, their Italian Sausage Pan Pizza was chosen by The Food Network as one of the 5 best pizzas in the entire United States.

In addition to its original Morton Grove location, Pequods now has a second location, in Chicagos Lincoln Park neighborhood.

Select The Best Toppings

Chicago Deep Dish Pizza

Pizza toppings are sometimes the flavor carriers of this meal. If youre choosing meats, make sure you dont skimp by grabbing the cheapest stuff on the shelf. Instead, look for high-quality ingredients that have been created with care. Whether youre dicing pepperoni or browning spicy sausage, you dont want these toppings to weaken the rest of the pie.

The vegetables are just as important here. Fresh instead of canned or frozen is often the way to go when selecting pizza toppings. Dice peppers, onions, mushrooms and other vegetable toppings into small chunks. This makes them easier to stuff inside the pizza and better for biting into the slice. Youll need that fork power to get through the thick crust and gooey cheese.

You dont have to stick to the traditional toppings, either. Get creative with your pizza, kicking it up a notch with a barbecue and chicken flavor combination or a fresh bite of spinach and garlic. Pizza can be as delicious and creative as you want, so dont be afraid to think outside the box.

The NY pie has a flavorful crust, with a puffy edge and a beautifully charred undercarriage. There are a lot of creative topping combinations worth your attention . But even their simple pieslike the cheese made with aged mozzarella, a spicy thick sauce, shaved garlic, and parmhave unexpected complexity. The addition of a soubise base, fried rosemary, and hot honey on their NY-style white pie makes us want to call Infatuation NYC for the sole purpose of bragging that its in our city, not theirs.

Two reasons we really enjoy Bobs is that theres no Bob and this place boldly claims it makes Pilsen-style pizza . But we love it because its the kind of fantastic pizza we immediately want all of our East Coast friends to try. The crust is made with beer and its pliable enough to fold, with a slightly-charred undercarriage and puffy outer edge.
