Hot dogs arrived in America in the late 1800s, but Jewish immigrants created the all-beef version in the early 1900s. This style became popular even in non-Jewish communities because Chicagos Union Stockyards had a terrible reputation for health standards, and kosher standards were considered safer and cleaner.
Enter, Vienna Beef. The brand synonymous with Chicago-style hot dogs today was launched in 1893 ahead of the Columbian Exposition. Samuel Ladany and Emil Reichl, two Jewish immigrants from Austria-Hungary, started selling their all-beef, spiced dogs from a stand during the fair and used the proceeds to open Vienna Beef. The family-owned company is now on its fourth generation and still uses the original recipe.

I have an emotional connection to Gene & Jude’s. It was one of the very first hot dogs I tried after moving to Chicago. It was my favorite then, and it remains so now. Obviously, I’m not the only one. When we put together a staff picks, Gene & Jude’s got some love. And when Serious Eats selected the best hot dog in the nation for Rachel Ray Magazine, Gene & Judge’s came in first.
But why?
Sure, the atmosphere is gruff and straightforward. There is no ketchup on the premises. But the stand wouldn’t be continuously packed if it weren’t for expertly prepared hot dogs, which are always plump and extra-beefy, with an exceptional snap . Asking for everything only gets you mustard, relish, onions, and, if you want, sport peppers. Of course, each order is served with a handful of just-fried hand-cut fries, which come heaped on top whether you want them or not. Fortunately, you do.
Sadly, due to a flooding, Gene & Jude’s had to close for repairs. According to its Facebook page, the stand hopes to open in a week. I’ll be there the moment I hear it is open.

BACP would not confirm the dispute over the mural but did clarify, “If a business has a sign, canopy, awning, bench, or anything that extends over, under or is on the public way, it requires a Public Way Use permit issued by the Chicago Department of Business Affairs and Consumer Protection. Ald. Byron Sigcho-Lopez said small businesses are being punished, and the city should do more to help clarify rules and regulations.
“When we saw the license was tied to these violations, we became involved,” said Sigcho-Lopez, of the 25th Ward. “This is unfortunately not the only case where the city does not seem willing to work with small businesses.”
He said violations relating to the restaurant’s awning, which requires a public way permit, and mural, which could be considered advertising, are subjective. He said he hopes BACP will clarify these ordinances to help, not hurt, business owners already suffering from the pandemic.
“Thats the hope, that theyre a little more mindful small businesses are struggling,” said Sigcho-Lopez. “We need to be more receptive to the issues we have and work with them to be in compliance, but without going this far, losing a business, one of the oldest if not the oldest in our community. I think it was an inadequate, disproportion response.”
