Vegetable Pizza Filling Ideas:

  • Giardiniera. This is probably my favorite, and what I used to fill this pizza. Make it yourself with my homemade giardiniera recipe.

  • gently spread tomato sauce over toppings
  • cover pie with sauce
  • sprinkle on some parmesan to finish!

I like to layer my filling: a little sprinkle of cheese on bottom and then some cheese in between the filling if Im using more than one, and then most of the cheese on top of the fillings as it will melt downwards to fill in any gaps!

Note: some deep dish pizza places add a little mozzarella around the edge of the dough so that the crust bakes up cheesy and crispy. Tuck some mozz around the crust if you want this effect.

What Pan To Use

This recipe makes enough dough for one 12-inch pizza. You can also divide it into two 8 or 9 inch pizzas.

I like my dough on the medium thick side, but if you prefer a thinner dough, just use less. Extra dough can always be made into a small personal pie or turned into some breadsticks.

I use my 12-inch cast iron skillet to make my deep dish pizza, but you can also buy specialty deep dish pans or use cake pans!

No matter what pan you use, youll want to oil or butter the pan to give that slight fried dough effect and also ensure that the pie will be easily removed from the pan!

You can freeze deep-dish pizza. The best way to do this is to allow the pizza to cool completely, then slice ut. Place individual slices on a tray and place the tray in the freezer. Once the pieces are frozen, transfer to a freezer bag and return to the freezer. To reheat pizza, I highly recommend using a toaster oven or oven. That will help the crust stay crispy, even for the leftovers!

Deep Dish Pizza Dough:

This isnt the same kind of dough as your average thin crust pizza. It has a couple extra ingredients.

For deep dish pizza you need: all purpose flour, water, oil, yeast, sugar, salt, and this last one is optionalcream of tartar.

A lot of people are under the impression that deep dish pizza contains cornmeal. This is just not true, at least not for traditional Chicago-style deep dish.

Traditionally corn oil is used to make deep dish pizza , and the faint taste of corn is likely from the choice of oil.

I usually use canola oil or safflower oil to make the pizza, but any mild tasting oil will work.

The second ingredient that may surprise you is cream of tartar. This is optional but works to slow down the proliferation of yeast. Slower yeast = slower rise = more flavor!

The dough itself requires very little effort to make. You whisk together the dry ingredients, add the wet, bring it together to make a shaggy dough, then just knead for one to minutes!

Yes thats right. No long kneading times here! This is in part to keep the tenderness of the crust. The oil in the dough also effectively shortens the gluten strands which also means a more tender crust.

You then leave the dough to rise for several hours, or overnight in the fridge. This long fermentation times does some of the work of kneading for you. The gluten strands relax and start to align in the wet dough.

BEST VEGAN DEEP DISH PIZZA IN CHICAGO

Theres no doubt after doing my research that the best place to get a vegan deep dish in Chicago is at the Chicago House of Za. Its a fully vegan establishment that serves not only the most delicious sounding pizzas, but also must-try appetizers and pastas, too. For this restaurant alone, Ill need to make my future vacay in Chicago at least two weeks long.

The Chicago House of Za is family owned and they make their pizzas, including their cashew mozzarella and seitan, in-house. They also carry locally brewed craft beer. Closing up shop to participate in the March for Animal Rights, you can feel confident knowing that youre money is supporting true animal lovers.

One: Make Pizza Dough

  • Combine the dry ingredients from the flour to the yeast in the bowl of a stand mixer fitted with the dough hook. Mix on low speed until combined.
  • Add the warm water and melted butter together and pour it in with the flour. Mix on low speed for 1 to 2 minutes, until its combined.
  • Knead the dough for 5 minutes by increasing the speed to medium until the dough pulls away from the side of the bowl. Add a tablespoon more flour if its too sticky.
  • Add the dough ball to a large bowl covered with oil.
  • Cover the bowl with plastic wrap or a dampened kitchen towel and place in a warm, dry place until doubled in size, about one hour. See post tips for ideas on where to raise the dough.

    Mmm.. Vegan Chicago Style Deep Dish Pizza.. Its like a pizza and a pie all in one! I really love eating pie so I am basically obsessed with this Vegan Chicago Style Deep Dish Pizza. The crust is thick and hearty. The sauce is chunky and spicy. The vegan mozzarella is melty and gooey. It is everything a pizza should be, you wont even be able to tell its vegan. Use this pizza to convince all your friends to give up cheese!

    The sauce only takes about 15 minutes and you can roll out the dough while the sauce cooks. If you make the cheese ahead of time, this Vegan Chicago Style Deep Dish Pizza comes together pretty quickly!

    Most pizza dough is vegan, but be sure to check the label. There could be butter or cheese hiding in there. For this Vegan Chicago Style Deep Dish Pizza, we used a garlic herb pizza dough. We tried the recipe with whole wheat pizza dough but the crust came out a little too chewy, so we recommend a traditional white flour pizza dough for the best flavor and texture.

    Vegan Chicago Style Deep Dish Pizza

    Cheesy spicy and saucy, this vegan Chicago style deep dish pizza does it all! Made with homemade cashew cheese and sauce for maximum flavor, and store bought dough for maximum convenience. The corn meal makes it taste homemade!

    • 4cupssmall tomatoeschopped
    • 1/4cupchopped basil
    • 3cloveslarge garlicminced
    • 1small can tomato paste
    • 1teaspoonred pepper flakes
    • 1teaspoonfennel seed
    • 1/4cup+ 1 tablespoon corn meal
    • 2-3tablespoonsflourto roll out dough

    Vegan Mozzarella

    • 1/2cupraw cashewssoaked for 2 hours or boiled for 10 minutes
    • 1 1/4cupswater
    • 1 1/2tbspnutritional yeast
    • 1tsplemon juice
    • 1/2tspgarlic powder

    Sautéed mushrooms, onions, and peppers are piled on top of a cashew cheese covered cornmeal crust and smothered in garlicky tomato sauce to create this vegan deep dish pizza.

    I have a handful of ambitious recipes that have been on my to-make list forever. Stuff like this: vegan deep dish pizza. The thing is, as much as I love the idea of something like this, I can mentally psych myself out. It’ll be a massive project. I’ll trash the kitchen. It’ll probably take me eight tries to get it right. That kind of thing.

    Okay, so I did trash the kitchen, but I trash the kitchen when I make toast, so don’t read so much into that. And yes, this was a project, but you know what? It was fun and totally worth it. In fact, I didn’t even whine about it when the first set of photos sucked and I had to make the whole thing again! Because this baby was tasty business. Totally worthy of a couple of afternoons worth of kitchen trashing!

    There were two major psych-out factors to this one. Firstly, the dough. I rarely make yeast breads because I’m too lazy to knead the dough and also too lazy to bust out and clean up the stand mixer. Usually though, when I do decide to suck it up and get to kneading, it’s not nearly as bad as I expect. This particular dough was exceptional — super moist and crumbly thanks to some olive oil and cornmeal. I can handle seven minutes of kneading for that.

    Four: Assemble And Bake The Pizza

  • Place one of the dough balls on a lightly floured surface and roll it out until its roughly a 12-inch circle. Place it in a prepared pan, pressing the dough in the pan and up the sides. Repeat with the other dough ball.
  • Top each crust with vegan mozzarella shreds.
  • Add tomato sauce on top of the cheese.
  • Add extra toppings here, like vegan pepperoni.
  • Sprinkle vegan parmesan on top.
  • Bake for 25 to 30 minutes. The edges of the crust should be golden brown.
  • Let pizzas sit for 10 minutes after removing them from the oven before slicing and serving.
